Butternut Squash and Pear Soup

I had a few ingredients in my fridge that needed to be used. I am trying to eat less dairy and wheat products so I needed to be a little creative with my ingredients and couldn’t just throw some cheese on it or add some noodles, Like I used to do.

I had :

  • garlic (3 cloves)
  • pears (2)
  • carrots(3)
  • butternut squash (1)
  • ginger (1tbs fresh grated)
  • potatoes (8 new baby ones)
  • bacon (6 strips)
  • spinach (2 handfulls)
  • red peppers (1)
  • onion (1)

So what did I do?

I pealed and cut the garlic, ginger, carrots, butternut squash, potatoes, and onion into bite size pieces and put it all in a pot. I filled it with water so that the veggies were just covered then I put it on the stove and brought the water to a boil.

Meanwhile, I cut the bacon (with scissors) and put it in a frying pan. when it was starting to get crispy i turned the temperature down and added the red pepper to it cut into small pieces. when the bacon was crispy drained the fat and then added the two handfuls of spinach. I mixed it until the spinach was wilted and cooked. then I put it aside.

By this time the veggies were soft and the water was about half the amount as it was when I started. I turned off the heat and set it aside to cool a bit. As I was waiting i got out my blender and set it up. I then poured the cooled veggies and liquid into the blender and blended up that bad boy.

It took me two batches to get it all blended smoothly. I poured the finished product back into the original pot and turned the heat back on low.

It was ready to serve!

I spooned some into bowls and topped it with the bacon/red pepper/spinach mixture and served it to my sweet family!
